  • 1 cup dark brown sugar firmly packed
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 2 teaspoons ground cardamom optional but recommended
  • 1 cup chopped walnuts or pecans

Instructions
 

Step 1: Cream Butter & Sugars

  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes using an electric mixer).

Step 2: Add Eggs & Vanilla

  • Beat in the eggs one at a time, then stir in the vanilla extract.

Step 3: Mix Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and cardamom.

Step 4: Combine Wet & Dry

  • Gradually mix the dry ingredients into the wet ingredients. Mix until just combined—do not overmix.

Step 5: Add Nuts

  • Fold in the chopped nuts gently using a spatula or wooden spoon.

Step 6: Shape the Dough

  • Roll the dough into 1-inch balls and place them on ungreased baking sheets, spaced slightly apart.

Step 7: Bake

  • Bake in a preheated oven at 350°F (175°C) for 12–15 minutes, or until the edges are just golden.

Step 8: Cool

  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.
