🌮 Taco Pasta – Easy One-Pot Weeknight Dinner

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning or 1 store-bought packet
  • 10 oz rotini or elbow pasta
  • 1 10 oz can Rotel (diced tomatoes with green chilies)
  • 2 cups beef broth
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional: chopped cilantro sliced green onions, or jalapeños for garnish

Instructions
 

  • In a large skillet or Dutch oven, cook the ground beef and diced onion over medium heat until browned. Drain excess grease.
  • Add garlic and taco seasoning. Stir for 1 minute until fragrant.
  • Add pasta, Rotel, beef broth, and tomato sauce. Stir to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, or until pasta is tender.
  • Remove from heat. Stir in sour cream and shredded cheddar cheese until melted and creamy.
  • Season with salt and pepper to taste.
  • Garnish as desired and serve warm.
