- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup 113g cold unsalted butter, cubed
- 1/2 cup 120ml heavy cream, plus more for brushing
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup 80g blood orange marmalade (store-bought or homemade)
- Zest of 1 blood orange optional
For the Glaze:
- 1/2 cup 60g powdered sugar
- 1 –2 tablespoons fresh blood orange juice
- Zest for garnish optional
Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, salt, and optional zest.
Add Wet Ingredients
In a small bowl, whisk together cream, egg, and vanilla. Pour into dry mixture and stir until just combined—do not overmix.
Fold in Marmalade
Gently fold in marmalade, leaving streaks and swirls rather than fully mixing in. This creates a marbled effect.
Shape the Dough
Turn the dough onto a lightly floured surface. Pat into a 1-inch thick round disk. Cut into 8 wedges.
Chill (Optional but Recommended)
Use cold butter for the flakiest scones—don’t skip this!
Marmalade adds sweetness and moisture—use a thick, chunky variety for best results.
Don’t overwork the dough or your scones may become tough.
