Dry Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp ground cinnamon optional
- Pinch of salt
Wet Ingredients:
- 3 ripe bananas mashed
- 3 large eggs
- ½ cup vegetable oil or melted butter
- 1 cup sugar brown or white
- 1 tsp vanilla extract optional
Preheat oven to 350°F (180°C).
Grease and flour a medium cake pan.
In a large bowl, mix the mashed bananas, eggs, oil, sugar, and vanilla until well combined.
In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
Gently fold the dry ingredients into the banana mixture until just combined. Do not overmix.
Pour the batter into the prepared pan.
Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool slightly before removing from the pan and serving.
