Ingredients
  

  • 3 medium ripe bananas mashed
  • 2 large eggs
  • 1/4 cup 60ml melted coconut oil (or olive oil)
  • 1/4 cup 60ml pure maple syrup or honey
  • 1/4 cup 60g plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon optional
  • 1/4 teaspoon salt
  • 1 1/2 cups 180g whole wheat flour
  • Optional: 1/2 cup chopped walnuts or dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, mash the bananas until smooth.
  • Add eggs, melted coconut oil, maple syrup, yogurt, and vanilla. Whisk until well combined.
  • Stir in baking soda, cinnamon (if using), and salt.
  • Gently fold in the whole wheat flour until just combined—do not overmix.
  • Fold in walnuts or chocolate chips, if using.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For muffins instead of a loaf, pour batter into muffin tins and bake at 350°F for 18–22 minutes.
