Ingredients
  

  • 1 cup 2 sticks / 226g unsalted butter, softened
  • ¾ cup 150g light brown sugar
  • ½ cup 100g granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¼ cups 280g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup sweetened shredded coconut
  • ½ cup chopped dried pineapple
  • ½ cup chopped dried mango or papaya
  • ¾ cup white chocolate chips
  • Optional: macadamia nuts or chopped almonds ½ cup

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream Butter and Sugars

  • In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes).

Add Eggs and Vanilla

  • Mix in the eggs, one at a time, followed by vanilla extract.

Mix Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined.

Fold in the Goodies

  • Stir in coconut, dried pineapple, mango (or papaya), and white chocolate chips. Add optional nuts if using.

Chill (Optional)

  • Chill the dough for 30 minutes if you prefer a thicker cookie.

Scoop and Bake

  • Scoop rounded tablespoons of dough onto prepared baking sheets. Bake for 10–12 minutes, or until golden at the edges but soft in the center.

Cool

  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
