Ingredients
  

For the crust:

  • cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • ½ cup 1 stick cold unsalted butter, cut into cubes
  • 3 –4 tablespoons ice water

For the filling:

  • 3 medium apples like Honeycrisp or Granny Smith, peeled, cored, and thinly sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • teaspoons fresh grated ginger or 1 tablespoon finely chopped crystallized ginger
  • ½ teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon flour or cornstarch to thicken

For assembly:

  • 1 egg beaten (for egg wash)
  • 1 tablespoon coarse sugar for topping, optional

Instructions
 

Make the crust

  • In a bowl, whisk flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Add ice water 1 tablespoon at a time until dough forms. Shape into a disc, wrap, and chill for 30 minutes.

Preheat oven

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the filling

  • In a bowl, toss sliced apples with brown sugar, white sugar, ginger, cinnamon, lemon juice, zest, and flour or cornstarch.

Roll the dough

  • On a floured surface, roll out dough into a 12-inch circle. Transfer to the baking sheet.

Assemble the galette

  • Pile the apple filling into the center of the dough, leaving a 2-inch border. Fold edges over the filling, pleating gently.

Add finishing touches

  • Brush crust with beaten egg and sprinkle with coarse sugar if desired.

Bake

  • Bake for 35–40 minutes, or until crust is golden and apples are tender. Cool 10–15 minutes before slicing.
