Ingredients
  

For the Crust:

  • 1 roll 16.5 oz refrigerated sugar cookie dough (or homemade)
  • Optional: 1 tsp vanilla extract

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • cups powdered sugar
  • 1 tsp vanilla extract

For the Fruit Topping:

  • 1 cup sliced strawberries
  • ½ cup blueberries
  • ½ cup kiwi peeled and sliced
  • ½ cup mandarin oranges
  • ½ cup grapes halved
  • Optional: other fruits like blackberries raspberries, or mango

Instructions
 

Step 1: Make the Crust

  • Preheat oven to 350°F (175°C).
  • Press the cookie dough evenly into a 12-inch pizza pan.
  • Bake for 12–15 minutes, or until golden brown.
  • Remove from oven and cool completely.

Step 2: Make the Frosting

  • Beat cream cheese and butter until smooth.
  • Add powdered sugar and vanilla, beat until creamy.
  • Chill frosting if needed while crust cools.

Step 3: Decorate

  • Spread frosting evenly over the cooled crust.
  • Arrange sliced fruit in decorative patterns or in a rainbow design.
  • Optionally brush with a warm apricot jam glaze to give a glossy finish.

Notes

Store covered in the fridge for up to 2 days.
