- 1 roll 16.5 oz refrigerated sugar cookie dough (or homemade)
- Optional: 1 tsp vanilla extract
For the Cream Cheese Frosting:
- 8 oz cream cheese softened
- ¼ cup unsalted butter softened
- 1½ cups powdered sugar
- 1 tsp vanilla extract
For the Fruit Topping:
- 1 cup sliced strawberries
- ½ cup blueberries
- ½ cup kiwi peeled and sliced
- ½ cup mandarin oranges
- ½ cup grapes halved
- Optional: other fruits like blackberries raspberries, or mango
Step 1: Make the Crust
Preheat oven to 350°F (175°C).
Press the cookie dough evenly into a 12-inch pizza pan.
Bake for 12–15 minutes, or until golden brown.
Remove from oven and cool completely.
Step 2: Make the Frosting
Beat cream cheese and butter until smooth.
Add powdered sugar and vanilla, beat until creamy.
Chill frosting if needed while crust cools.
Step 3: Decorate
Spread frosting evenly over the cooled crust.
Arrange sliced fruit in decorative patterns or in a rainbow design.
Optionally brush with a warm apricot jam glaze to give a glossy finish.
Store covered in the fridge for up to 2 days.
