Ingredients
  

For the Sugar Cookies:

  • 2 ¾ cups 345g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup 226g unsalted butter, softened
  • 1 ½ cups 300g granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 tablespoons sour cream for extra softness

For the Strawberry Buttercream:

  • ½ cup 113g unsalted butter, softened
  • 2 cups 240g powdered sugar, sifted
  • ¼ cup freeze-dried strawberries finely crushed into powder
  • 2 –3 tablespoons heavy cream or milk
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions
 

Preheat Oven & Prep Pans

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Mix Dry Ingredients

  • In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.

Cream Butter & Sugar

  • In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes). Add the egg, vanilla extract, and sour cream, and mix until combined.

Combine Dry & Wet

  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

Shape Cookies

  • Scoop 1.5-tablespoon-sized balls of dough, roll slightly, and place 2 inches apart on prepared baking sheets. Flatten slightly with the bottom of a glass or your palm.

Bake

  • Bake for 9–11 minutes, until edges are set but centers still look soft. Do not overbake. Let cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.

Notes

Freeze-dried strawberries give the buttercream natural color and real berry flavor without excess moisture.
For a stronger flavor, add a few drops of natural strawberry extract (optional).
Sour cream in the dough helps keep the cookies super soft!
