Ingredients
  

  • 12 oz rigatoni pasta
  • 2 cups shredded cooked chicken grilled, rotisserie, or leftover
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk whole or 2%
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika optional
  • Salt and pepper to taste
  • ½ cup barbecue sauce your favorite brand
  • Optional garnish: sliced green onions chopped parsley, crispy bacon bits

Instructions
 

Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Drain and set aside.

Make the Cheese Sauce

  • In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk, stirring constantly until smooth and thickened (about 3–4 minutes).

Add Cheese & Seasonings

  • Remove the pan from heat and stir in cheddar, mozzarella, garlic powder, smoked paprika, salt, and pepper until melted and smooth.

Assemble the Dish

  • In the pasta pot or a large bowl, combine cooked pasta, shredded chicken, cheese sauce, and barbecue sauce. Stir until well coated.

Bake (Optional)

  • For a baked version: Transfer mixture to a greased 9x13 baking dish. Top with extra cheese if desired. Bake at 375°F (190°C) for 15–20 minutes until bubbly and golden on top.

Serve

  • Garnish with green onions, parsley, or bacon bits if desired. Serve hot!
