Ingredients
  

  • 1 cup long-grain white rice or basmati for extra fluff
  • 2 cups water or use chicken or vegetable broth for added flavor
  • 1 tablespoon oil canola or olive oil
  • ½ teaspoon salt
  • 1 tablespoon fresh lime juice plus extra to taste
  • 2 teaspoons fresh lemon juice
  • ¼ cup chopped fresh cilantro

Instructions
 

Rinse the rice

  • Rinse rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy grains.

Cook the rice

  • In a medium saucepan, combine the rice, water (or broth), oil, salt, and bay leaf if using. Bring to a boil over medium-high heat.

Simmer and steam

  • Once boiling, reduce heat to low, cover, and simmer for 18–20 minutes, or until water is absorbed and rice is tender.

Rest and fluff

  • Remove from heat and let sit, covered, for 5 minutes. Discard bay leaf. Fluff the rice with a fork.

Add flavor

  • Stir in lime juice, lemon juice, and chopped cilantro. Taste and adjust seasoning or citrus as desired.
