Ingredients
  

For the Dough (Optional — skip if using store-bought pizza or crescent dough):

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp instant yeast 1 packet
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup warm milk 110°F / 45°C
  • ¼ cup unsalted butter melted
  • 1 egg
  • For the Filling:
  • 1 tbsp butter
  • 6 large eggs
  • Salt & pepper to taste
  • 1 cup cooked breakfast sausage or crumbled bacon
  • 1 ½ cups shredded cheddar cheese
  • Optional: diced bell peppers green onions, or sautĆ©ed mushrooms

For the Topping:

  • 2 tbsp melted butter
  • Optional: garlic powder everything bagel seasoning, sesame seeds

Instructions
 

Make the Dough (Skip if using store-bought):

  • In a large bowl, combine warm milk, yeast, and sugar. Let sit for 5 minutes until frothy. Add melted butter, egg, salt, and flour. Mix and knead until smooth. Cover and let rise 1 hour, or until doubled in size.

Cook the Filling:

  • In a skillet, melt butter and scramble eggs. Season with salt and pepper. Set aside. Prepare cooked sausage or bacon and chop any additional veggies.

Assemble the Rolls:

  • Roll out dough (or store-bought dough) into a rectangle (about 12"x18"). Evenly spread scrambled eggs, meat, cheese, and optional veggies. Roll up tightly from the long side and slice into 12 rolls.

Bake:

  • Preheat oven to 350°F (175°C). Place rolls in a greased baking dish. Brush with melted butter and sprinkle with seasoning (if using). Bake for 20–25 minutes or until golden brown and bubbly.

Serve:

  • Serve warm. Great with hot sauce, salsa, or ketchup on the side!

Notes

You can use crescent dough, puff pastry, or even canned biscuit dough for a shortcut.
Add jalapeƱos or hot sauce to the eggs for a spicy kick.
