Ingredients
  

Chicken & Toppings:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon seasoned salt like Lawry’s
  • 6 slices bacon
  • 1 cup sliced mushrooms
  • 1 tablespoon butter
  • 1 cup shredded Colby Jack cheese
  • ½ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley optional, for garnish

Honey Mustard Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon lemon juice

Instructions
 

Make the Honey Mustard Sauce:

  • In a bowl, whisk together mayo, Dijon mustard, honey, and lemon juice. Reserve half of the sauce for serving.

Prepare the Chicken:

  • Flatten chicken slightly with a meat mallet. Rub with olive oil and seasoned salt.

Cook the Bacon:

  • Cook bacon until crispy in a skillet. Remove and set aside. Leave 1 tbsp bacon fat in the skillet.

Sear the Chicken:

  • Sear chicken breasts in the bacon fat for 3–4 minutes per side until golden. Transfer to a baking dish.

Cook the Mushrooms:

  • In the same pan, melt butter and sauté mushrooms until tender.

Assemble:

  • Brush chicken with reserved honey mustard. Top with mushrooms, crumbled bacon, and cheeses.

Bake:

  • Bake at 375°F (190°C) for 15–20 minutes until chicken reaches 165°F and cheese is melted.

Serve:

  • Drizzle with remaining sauce and garnish with parsley if desired.

Notes

You can make this recipe keto-friendly by using sugar-free honey and omitting or modifying the honey mustard sauce. For even more restaurant-style flair, serve it with seasoned fries and a house salad on the side—just like Outback!
