Ingredients
  

For the Turkey Filling:

  • 1 lb 450g ground turkey
  • 1 tablespoon olive oil
  • 2 teaspoons garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of ½ lemon

For the Tzatziki Sauce:

  • 1 cup Greek yogurt plain, full-fat or low-fat
  • ½ cucumber peeled and grated
  • 1 tablespoon fresh dill chopped (or 1 tsp dried)
  • 1 tablespoon lemon juice
  • 1 garlic clove minced
  • Salt and pepper to taste

For the Pockets:

  • 4 whole wheat or regular pita breads halved, or use pita pockets
  • 1 cup cherry tomatoes halved
  • 1 cup shredded romaine lettuce or spinach
  • ¼ small red onion thinly sliced

Instructions
 

Make the Tzatziki Sauce

  • Place grated cucumber in a clean kitchen towel and squeeze out excess liquid.
  • In a bowl, mix Greek yogurt, cucumber, dill, lemon juice, garlic, salt, and pepper.
  • Chill in fridge while preparing the turkey (flavors develop best when chilled for at least 10 minutes).

Cook the Ground Turkey

  • Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds.
  • Add ground turkey, breaking it apart with a spoon.
  • Stir in oregano, cumin, paprika, salt, and pepper. Cook for 7–9 minutes until browned and cooked through.
  • Squeeze fresh lemon juice over the turkey and mix.

Assemble the Gyro Pockets

  • Warm pita bread (in a dry skillet, microwave, or oven).
  • Fill each pita half with lettuce, turkey, tomatoes, red onion, and a dollop of tzatziki.
  • Add optional toppings like feta or olives, if using.
