For the Tzatziki Sauce:
- 1 cup Greek yogurt plain, full-fat or low-fat
- ½ cucumber peeled and grated
- 1 tablespoon fresh dill chopped (or 1 tsp dried)
- 1 tablespoon lemon juice
- 1 garlic clove minced
- Salt and pepper to taste
For the Pockets:
- 4 whole wheat or regular pita breads halved, or use pita pockets
- 1 cup cherry tomatoes halved
- 1 cup shredded romaine lettuce or spinach
- ¼ small red onion thinly sliced
Make the Tzatziki Sauce
Place grated cucumber in a clean kitchen towel and squeeze out excess liquid.
In a bowl, mix Greek yogurt, cucumber, dill, lemon juice, garlic, salt, and pepper.
Chill in fridge while preparing the turkey (flavors develop best when chilled for at least 10 minutes).
Cook the Ground Turkey
Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds.
Add ground turkey, breaking it apart with a spoon.
