Ingredients
  

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 slices cooked bacon
  • 1 cup sliced mushrooms
  • 1 tablespoon butter
  • 1 cup shredded Colby Jack or Cheddar cheese

For the Honey Mustard Sauce:

  • 1/3 cup Dijon mustard
  • 1/3 cup honey
  • 2 tablespoons mayonnaise

🧀 How to Make Alice Springs Chicken:

  • Whisk together mustard, honey, and mayonnaise to make the sauce. Set aside.
  • Season chicken with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Sear chicken breasts 3–4 minutes per side until browned (they don't need to be cooked through).
  • Remove chicken and transfer to a baking dish. Spread 1–2 tablespoons of honey mustard sauce over each piece.
  • In the same skillet, melt butter and sauté mushrooms until browned, about 5 minutes.
  • Top each chicken breast with mushrooms, bacon, and shredded cheese.
  • Bake at 375°F (190°C) for 15–18 minutes, or until chicken is fully cooked and cheese is melted.
  • Serve hot with remaining honey mustard sauce on the side.

Notes

💡 To save time, use rotisserie chicken and bake for just 10 minutes to melt the toppings.
