For the Chicken:
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
For the Stuffing:
- 1/2 cup cream cheese softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup fresh spinach chopped
- 1 garlic clove minced
- 1 tablespoon fresh parsley or 1 tsp dried
- Optional: 2–3 sun-dried tomatoes chopped (for extra flavor)
Step 1: Prep the Chicken
Preheat oven to 375°F (190°C).
Pat chicken dry and season both sides with salt, pepper, paprika, and garlic powder.
Carefully slice a pocket into the side of each chicken breast using a sharp knife — don't cut all the way through.
Step 2: Make the Stuffing
In a bowl, mix cream cheese, mozzarella, Parmesan, spinach, garlic, and parsley until well combined.
Stuff each chicken pocket with the filling, securing with toothpicks if needed.
Step 3: Sear and Bake
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear chicken breasts for 2–3 minutes on each side until golden brown.
Transfer skillet to preheated oven and bake for 15–20 minutes, or until internal temp reaches 165°F (74°C).
Step 4: Rest & Serve
Let the chicken rest for 5 minutes.
