Ingredients
  

For the Chicken:

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Stuffing:

  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup fresh spinach chopped
  • 1 garlic clove minced
  • 1 tablespoon fresh parsley or 1 tsp dried
  • Optional: 2–3 sun-dried tomatoes chopped (for extra flavor)

Instructions
 

Step 1: Prep the Chicken

  • Preheat oven to 375°F (190°C).
  • Pat chicken dry and season both sides with salt, pepper, paprika, and garlic powder.
  • Carefully slice a pocket into the side of each chicken breast using a sharp knife — don't cut all the way through.

Step 2: Make the Stuffing

  • In a bowl, mix cream cheese, mozzarella, Parmesan, spinach, garlic, and parsley until well combined.
  • Stuff each chicken pocket with the filling, securing with toothpicks if needed.

Step 3: Sear and Bake

  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear chicken breasts for 2–3 minutes on each side until golden brown.
  • Transfer skillet to preheated oven and bake for 15–20 minutes, or until internal temp reaches 165°F (74°C).

Step 4: Rest & Serve

  • Let the chicken rest for 5 minutes.
  • Remove toothpicks, slice, and serve!

Notes

Use a meat thermometer for perfect doneness
Feel free to swap spinach for chopped kale or arugula
Add a pinch of red pepper flakes for a spicy kick
