2 cups old-fashioned oats slightly pulsed 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon salt 1/2 cup unsalted butter softened 1/2 cup brown sugar packed 1/4 cup granulated sugar 1 large egg room temperature 1 teaspoon vanilla extract 1 tablespoon milk for icing 1 cup powdered sugar for icing
Preheat the oven to 350°F (177°C). Line two baking sheets with parchment paper.
Pulse the oats in a food processor. In a medium bowl, whisk the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Cream the butter and sugars. Add the egg and vanilla.
Slowly mix in the dry ingredients. Drop dough balls on the prepared sheets.
Bake for 10-12 minutes. Cool completely.
Whisk together powdered sugar and milk. Drizzle icing over cooled cookies.
