Ingredients
  

  • 2 cups old-fashioned oats slightly pulsed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk for icing
  • 1 cup powdered sugar for icing

Instructions
 

  • Preheat the oven to 350°F (177°C). Line two baking sheets with parchment paper.
  • Pulse the oats in a food processor. In a medium bowl, whisk the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Cream the butter and sugars. Add the egg and vanilla.
  • Slowly mix in the dry ingredients. Drop dough balls on the prepared sheets.
  • Bake for 10-12 minutes. Cool completely.
  • Whisk together powdered sugar and milk. Drizzle icing over cooled cookies.
