Ingredients
  

  • 1 ½ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Filling:

  • ½ cup unsalted butter softened
  • 1 ¾ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons heavy cream

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • Cream the butter and sugar, then add egg and vanilla. Mix in dry ingredients.
  • Roll out dough and cut into round shapes.
  • Bake for 10-12 minutes; cool completely.
  • Beat butter, powdered sugar, vanilla, and cream to make the filling.
  • Spread filling on one cookie and top with another to form sandwiches.
