- 1 ½ cups all-purpose flour
- ¾ cup cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Filling:
- ½ cup unsalted butter softened
- 1 ¾ cups powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons heavy cream
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Cream the butter and sugar, then add egg and vanilla. Mix in dry ingredients.
Roll out dough and cut into round shapes.
Bake for 10-12 minutes; cool completely.
Beat butter, powdered sugar, vanilla, and cream to make the filling.
Spread filling on one cookie and top with another to form sandwiches.
