Ingredients
  

For the Chocolate Cake Layers:

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

For the Chocolate Mousse:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups semi-sweet chocolate melted
  • For the White Chocolate Ganache:
  • 12 oz white chocolate chopped
  • 1 cup heavy cream
  • For the Dark Chocolate Ganache:
  • 12 oz semi-sweet chocolate chopped
  • 1 cup heavy cream

Instructions
 

  • Preheat oven to 350°F. Prepare three 9-inch cake pans with parchment paper.
  • Mix dry ingredients for the cake, then add wet ingredients and boiling water.
  • Divide batter into pans and bake for 25-30 minutes. Cool completely.
  • Whip cream for the mousse, then fold in melted chocolate.
  • Make the white chocolate ganache by pouring hot cream over white chocolate.
  • Repeat for the dark chocolate ganache with semi-sweet chocolate.
  • Assemble the cake with mousse between layers and ganache on top.
